Spatchcocked Grilled Turkey

jDay 5 of our Christmas Turkey on the Grill series. Grill master Micheal Rhulman has a delicious Spatchcocked Grilled Turkey with Sage Butter recipe and a great story to go with it. I am sure that many of us can relate to the story and all of will love the recipe. It is a reasonably simple recipe that is big on flavor.

Micheal Ruhlman’s Grilled Turkey

Here is your ingredient list:

  • 1 turkey (ours was about 12 pounds)
  • kosher salt as needed (if you you’re not brining the turkey; for brining info see below)
  • juice of 1 lemon
  • 8 ounces butter, cut into 8 pieces
  • 1 bunch of sage, minced (you’ll want a good handful after it’s minced)
  • 2 tablespoons mustard powder (my dad always used Coleman’s, the best)
  • 1 shallot, minced
  • Ground black pepper to taste

North Carolina Grilled Turkey

Day 3 of our Christmas Turkey on the Grill series. Today we are visiting the South with this recipe for a North Carolina style grilled turkey. As a special treat, we have two recipes for North Carolina Barbecue Turkey that we are going to feature today. The first is from the grill masters at the National Turkey Foundation. This recipe mixes in some bacon and red pepper along with the ingredient that make Carolina BBQ what it is, cider vinegar.
